150g smoked bacon
Pickled chile (optional)
1/2 cup mayonnaise
Cut the meat in slices and hit them with the help of a hammer between two nylons films to tenderize.
Cook on a hot griddle, 2 min on each side.
Cook the egg on the hot griddle.
Place 2 or 3 slices of bacon on the griddle, place over them mozzarella. Then make a “book” with it.
Place mayonnaise on the bread, then the tenderloin, bacon and mozzarella “book”, egg, arugula, tomato, chile and bread.
